Registration Problems

I’ve just found out that there is an issue with my server’s PHP settings that will not allow my blog to send out emails. Unfortunately, there is nothing that I can do about this so I will be changing hosts soon.
In the meantime, I have changed the settings so that you do NOT have to register to leave comments.
If you have already registered but never got the email with your password in it, please use the contact form and drop me a line with your desired password and the username that you signed up with and I will manually change your password for you.

Turkey, Cheese & Veggie *Stove-Top* Casserole

I have found that with one picky kid and one who will eat anything that won’t eat him first, it’s difficult finding something reasonably healthy that they will both eat without a fight and that doesn’t take 3 hours to fix or come out of a box.

This recipe is a tried and true favorite in my family and with Thanksgiving coming up, it’s also a great way to use all of that extra turkey and get your picky eaters to eat their vegetables without starting World War III.

Turkey, Cheese & Veggie *Stove-Top*Casserole

Ingredients:

  • 2-3 cups turkey, cooked and chopped*
  • 1 can cream of mushroom soup
  • 3/4 cup low fat sour cream
  • 2 cups (about 1/2 of a regular size package) Velveeta, chopped
  • 1 bag frozen ‘California mix’ vegetables (carrots, broccoli & cauliflower)
  • 3 cups instant white rice
  • 3 cups hot water
  • *optional* 1/2 cup each onion and green pepper, chopped

Directions:

  • In a 2 quart microwave safe dish, prepare rice as directed on box.
  • In a large pan, mix Velveeta, sour cream and soup. Cook over med/low heat, stirring frequently until cheese is melted.
  • Add cooked rice, vegetables and turkey. Continue cooking on med/low until vegetables are cooked, about 15 minutes**.

*Note: You can use leftover turkey breast from Thanksgiving dinner or some supermarkets actually carry chunks of pre-cooked turkey (I buy mine from Food-4-Less);  it really doesn’t matter what kind you use as long as you can cut it into 1-inch cubes and it’s already cooked.

** Note: I like my veggies nice and firm, if you prefer them more tender you can prepare them in the microwave according to the bag directions while the turkey is getting hot and then add to the cheese mixture at the very end.
